How to hide text formatting popup (Mini Toolbar) in Microsoft Word 2007

Hit the Office button.

Choose Word Options.

In the "Options" → "Popular" window ("Options" → "General" in newer versions of Word), uncheck the "Show Mini Toolbar on selection" option:
